Dairy cows going out of buisness- Bone breaking news 11/25/22
Technology is fast catching up with an industry that had its origin more than 10,000 years ago. Dairy cows will soon be out of work and Lord knows what will happen to those dossal critters that survive. I have always admired these creatures that gave so much so that utters can grow and prosper. The ability to manipulate the blue print of life, the genome, has opened vast opportunities in the production of customized products. The cell is essentially a dynamic factory that produces thousands of proteins under the direction of specific genes in carefully orchestrated metabolic processes. All living cells have the same documentation system for making proteins. So the genes that make a specific protein, like cow milk, can be removed and inserted into a yeast cell and the yeast cell will produce milk protein that is identical to that produced by the cow.
The cutting and pasting of genes has become widely used in the food industry for production of a variety of products through precision fermentation using microorganism such as yeast, algae, and bacteria. Gigantic tanks filled with genetically engineered yeast with inserted genes that code for milk protein are fed raw material and the resulting product purified. After some fine tuning, the milk has the same flavor, texture, and nutrition as that from our hard working cow. A number of companies, like Perfect Day in California and Eden Brew in Australia are leading the way in production of genetically engineered milk products.
So we can rest at ease as science has come to the rescue once again. Pollution of the environment with cow farts (methane) will be a thing of the past by 2035. And cows will have their day as their commercial use dwindles with artificial meats, and the few cows that are left will be happily greeting you at the local zoo.
